Ingredients:
1 cup uncooked oatmeal (instant or regular, I used rolled oats)
1 1/4 cup boiling water
1/2 cup butter or 1/2 cup margarine
1 cup granulated sugar
1 teaspoon of vanilla
2 eggs
1 1/2 cup flour
1 teaspoon of baking soda
1/2 teaspoon of salt
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
Trim:
1/4 cup butter or 1/4 cup margarine, melted
1/2 cup brown sugar
3 tablespoons of cream or 3 tablespoons of milk
3/4 cup flaked coconut
1/3 cup chopped walnuts (optional)
Instructions:
In a shallow bowl, soak the oats in boiling water for 20 minutes.
Meanwhile, measure the butter and sugars into the mixer bowl and beat until light.
Add the eggs and vanilla.
Sift and measure the flour, sifting again with the soda and spices.
By this time the oatmeal will be soaked and cooled.
Remove beaters from creamed mixture and stir in soaked oats.
Sift the flour mixture and incorporate it.
Return to a buttered 9×9″ pan and bake at 350°F for 40-50 minutes.
Mix all the filling ingredients.
Do not remove the cake from the pan, but while it is still hot, spread the topping on it and place it under the broiler until it is bubbling and tinged golden.
Watch carefully.
