Ingredients:
– 4 boneless, skinless chicken breasts
– 1 cup Caesar salad dressing
– ½ cup sour cream (optional)
– 1-1½ cups Parmesan cheese, grated
Instructions:
1. Heat your oven to 375°F and spray an 8″ x 11″ baking dish with cooking spray.
2. If the chicken breasts are uneven, pound them to an even ¾”-1″ thickness.
3. Sprinkle grated Parmesan cheese and freshly ground black pepper on both sides of the breasts, then place them in the prepared baking dish.
4. Whisk together Caesar dressing and sour cream in a small bowl. Pour the Caesar/sour cream mixture over each breast, then sprinkle grated Parmesan cheese on top.
5. Bake at 375°F for 30 minutes or until a meat thermometer reads 150°F in the thickest part.
6. Turn the oven to broil and broil the breasts for an additional 2-4 minutes or until golden brown. Watch closely to prevent burning.
7. Once done, a meat thermometer should register 165°F in the thickest part.
8. Remove from the oven, cover loosely with foil, and let the chicken rest for 5-10 minutes. Garnish with chopped parsley if desired. Enjoy!
