Apple Pie French Toast Roll-Ups! 🍏🍞🥮
Ingredients:
– 10-12 slices of toast bread
– 4 oz cream cheese, room temperature
– 2 eggs
– 3 tbsp milk
– 1/3 cup sugar
– 1 tsp ground cinnamon
– 2 tbsp butter for cooking (more if necessary)
– For the Homemade Apple Filling Option:
– 2 tbsp butter
– 3-4 medium apples, peeled, cored, and diced into 1/4-inch cubes
– 1/3 cup brown sugar
– 3 tbsp water
– 1 tsp cinnamon
– 1/8 tsp nutmeg
– 1 tbsp + 1 tsp cornstarch
– 2 tbsp water
– For the Canned Apple Filling Option:
– 1 can apple pie filling
Instructions:
- If you’re using the homemade apple filling, start by making it:
– In a saucepan, melt 2 tps of butter over medium heat.
– Add the diced apples and cook until they start to soften, about 3-4 minutes.
– Stir in the brown sugar, 3 tbsp of water, cinnamon, and nutmeg. Cook until the apples are tender and the mixture thickens, about 5-7 minutes.
– In a small bowl, mix the cornstarch and 2 tps of water to create a slurry. Stir this into the apple mixture and cook for an additional 2 minutes until thickened. Set aside to cool.
- For the French toast roll-ups:
– Flatten each bread slice with a rolling pin to make it thinner.
- In a mixing bowl, combine the cream cheese, 1/3 cup of sugar, and 1 tps of ground cinnamon until smooth.
- Spread a spoonful of the cream cheese mixture onto each slice of bread.
- If using homemade apple filling, spoon a small amount of the apple mixture onto each bread slice on top of the cream cheese.
- Roll up each bread slice tightly, starting from one end.
- In a separate shallow bowl, whisk together the eggs and 3 tbsp of milk.
- In a skillet, melt 2 tps of butter over medium heat.
- Dip each bread roll-up into the egg mixture, ensuring it’s coated on all sides.
- Place the coated roll-ups in the skillet and cook until golden brown on all sides, about 2-3 minutes per side. Add more butter if needed.
- Remove from the skillet and let them cool for a minute or two.
- If you’re using canned apple pie filling, warm it slightly in the microwave.
- Roll each French toast roll-up in a mixture of 1/3 cup of sugar and 1 tsp of ground cinnamon while they are still warm.
