Golden Lobster Medallions in Aromatic Garlic-Herb Butter

Ingredients:

# For the Lobster:
– 1½ to 2 lbs lobster tail meat, cut into bite-sized chunks
– 2 tablespoons olive oil or unsalted butter
– Salt and pepper, to taste
# For the Garlic-Herb Butter Sauce:
– 4 tablespoons unsalted butter
– 4 cloves garlic, minced
– 1 tablespoon fresh lemon juice
– 1 tablespoon chopped parsley
– 1 teaspoon fresh thyme
– 1 tablespoon seafood stock
– Red pepper flakes

Instructions:

1. Prepare the Lobster
– If using frozen lobster, thaw completely
– Remove meat from shells and cut into bite-sized chunks
2. Cook the Lobster
– Heat oil or butter in a large skillet over medium-high heat
– Sauté lobster chunks for 2-3 minutes until opaque
– Season with salt and pepper
– Remove from skillet and set aside
3. Create the Sauce
– In the same skillet, melt butter over medium heat
– Sauté minced garlic for 1-2 minutes until fragrant
– Add seafood stock and simmer for 2 minutes
– Incorporate lemon juice, thyme, and red pepper flakes
– Simmer for one minute
4. Combine
– Return lobster to skillet
– Gently coat with sauce
– Simmer 1-2 minutes
– Adjust seasoning to taste
5. Finish and Serve
– Transfer to serving platter
– Spoon sauce over lobster
– Garnish with parsley
– Serve with lemon wedges
Chef’s Secret: For the most tender lobster, remove it from heat as soon as it turns opaque – it will continue cooking slightly in the residual heat of the sauce.
