Honey Bacon Roasted Potatoes

Ingredients:

– 2 pounds russet potatoes, scrubbed and cut into 1-inch cubes
– 1/2 cup chopped bacon
– 1/4 cup honey
– 1 tablespoon olive oil
– 1 teaspoon salt
– 1/2 teaspoon black pepper

Directions:

1. Preheat oven to 425°F (220°C).
2. In a large bowl, combine the potatoes, bacon, honey, olive oil, salt, and pepper. Toss to coat.
3. Spread the potatoes in a single layer on a baking sheet.
4. Roast for 20-25 minutes, or until the potatoes are golden brown and tender.
