Here’s a simple and delicious potato soup recipe that’s perfect for anyone who loves a comforting bowl of creamy goodness:

 

Easy Potato Soup

 

Ingredients:

 

4 large russet potatoes, peeled and diced

1 medium onion, chopped

4 cups chicken broth or vegetable broth

1 cup heavy cream or milk (depending on how creamy you want it)

2 tbsp unsalted butter

Salt and pepper, to taste

Optional toppings: shredded cheese, chopped green onions, crumbled bacon, sour cream

 

Instructions:

 

1.Sauté the Onions: In a large pot over medium heat, melt the butter. Add the chopped onion and sauté until translucent, about 4-5 minutes.

2.Add Potatoes and Broth: Add the diced potatoes to the pot and then pour in the chicken or vegetable broth. Make sure the potatoes are submerged, if not, add a bit more broth or water.

3.Boil and Simmer: Bring the mixture to a boil, then reduce the heat and let it simmer until the potatoes are fork-tender, about 15-20 minutes.

4.Blend (optional): For a creamier texture, use an immersion blender to blend some or all of the soup directly in the pot. If you don’t have an immersion blender, you can transfer half of the soup to a regular blender, blend until smooth, and then return it to the pot. This step is optional; you can also leave the soup chunky if you prefer.

5.Add Cream: Stir in the heavy cream or milk. Heat the soup for another 2-3 minutes, but avoid letting it boil once the cream is added.

6.Season: Add salt and pepper to taste.

7.Serve: Pour the soup into bowls and top with your favorite toppings such as shredded cheese, chopped green onions, crumbled bacon, or a dollop of sour cream.
