Fried Cornbread – Southern Cornmeal Hoecakes 🫓🍯









2/3 cup cornmeal

1/3 cup self-rising flour

1/3 cup low-fat buttermilk

1 large egg

Cooking oil for frying (about 3 tablespoons of coconut oil, or your choice of oil)


In a mixing bowl, combine the cornmeal, self-rising flour, low-fat buttermilk, and egg. Stir the ingredients together until well mixed. The batter should be very moist but not runny, similar to pancake batter.

Heat the cooking oil in a skillet over medium heat.

Once the oil is hot, use a spoon to drop portions of the batter into the skillet.

Fry the hoecakes until they are golden brown on one side, then flip them over, like pancakes, to brown the other side.

After cooking, place the hoecakes on a plate lined with paper towels to absorb any excess oil.
