Grilled Chicken Skewers and Homemade Tzatziki

Ingredients:

 

2 lbs boneless, skinless chicken breasts, cut into 1-inch pieces

1/4 cup olive oil

1/4 cup fresh lemon juice

3 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon dried thyme

Salt and pepper to taste

Wooden skewers, soaked in water for 30 minutes

Tzatziki sauce for dipping (optional)

Directions:

 

In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper. Mix well.

 

Place the chicken pieces in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour or overnight for best results.

 

Preheat your grill to medium-high heat.

 

Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a little space between each piece.

 

Grill the chicken skewers for about 6-8 minutes per side, or until the chicken is fully cooked and has nice grill marks.

 

Serve the Chicken Souvlaki hot off the grill with tzatziki sauce for dipping, if desired.
