Ingredients:

1 lb ground beef (80/20 or 85/15)
1 medium onion, thinly sliced
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper, to taste
4 gyro-style flatbreads or pita bread
Tzatziki sauce (store-bought or homemade)
Optional toppings: sliced tomatoes, sliced cucumbers, crumbled feta cheese, lettuce
Homemade Tzatziki Sauce (optional):
1 cup Greek yogurt
1/2 English cucumber, grated and squeezed to remove excess moisture
1 clove garlic, minced
1 tablespoon fresh dill, chopped
1 tablespoon fresh lemon juice
Salt and pepper, to taste

Instructions:

In a large bowl, combine ground beef, oregano, cumin, paprika, salt, and pepper. Mix until the spices are well-distributed but be careful not to overmix. Shape the seasoned beef into 4 equal oval patties, about 1/2-inch thick.
Heat the olive oil in a large skillet over medium heat. Add the sliced onions, green bell pepper, and red bell pepper. Sauté the vegetables for about 5-7 minutes, or until they are tender and slightly caramelized. Add the minced garlic and cook for another minute. Remove the vegetables from the skillet and set them aside.
In the same skillet, cook the hamburger patties over medium heat for about 4-5 minutes per side, or until they reach your desired level of doneness. Once cooked, transfer the patties to a plate and let them rest for a few minutes.
While the patties are resting, prepare the homemade tzatziki sauce (if using). In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, and lemon juice. Season with salt and pepper to taste. Stir until well combined, then set aside.
To assemble the gyros, warm the flatbreads or pita bread in the oven or microwave for a few seconds. Spread a generous amount of tzatziki sauce on each flatbread. Place a hamburger patty on top, followed by the cooked peppers and onions. Add your desired toppings, such as sliced tomatoes, cucumbers, crumbled feta cheese, or lettuce.
Fold the flatbread around the fillings and serve immediately. Enjoy your homemade hamburger, peppers, and onion gyros!
