Zucchini Fritters with Fire Roasted Tomato Spread is a delightful dish that combines the light and crispy texture of the fritters with the rich and smoky flavor of the tomato spread. Here’s a simple recipe to try:

Zucchini Fritters:




2 medium zucchinis, grated

1/2 teaspoon salt

1/4 cup all-purpose flour

1/4 cup grated Parmesan cheese

2 garlic cloves, minced

1 large egg, beaten

1/4 teaspoon freshly ground black pepper

2-3 tablespoons olive oil (for frying)




Place the grated zucchini in a colander and sprinkle with the salt. Let it sit for 10 minutes, then squeeze out as much moisture as possible.

In a large bowl, combine zucchini, flour, Parmesan, garlic, egg, and black pepper. Stir until well mixed.

Heat the olive oil in a large skillet over medium heat.

Once roasted, let the tomatoes cool for a few minutes, then peel off the charred skins.

In a blender or food processor, combine the roasted tomatoes, garlic, olive oil, smoked paprika, cayenne pepper, salt, and black pepper. Blend until smooth. Adjust seasoning if necessary.
