Ingredients:

 

 

– 3 cups cooked rice (preferably day-old and chilled)

– 2 tablespoons vegetable oil

– 2 cloves garlic, minced

– 1 small onion, diced

– 1 cup mixed vegetables (carrots, peas, corn, bell peppers, etc.)

– 2 eggs, lightly beaten

– 2 tablespoons soy sauce

– 1 tablespoon oyster sauce (optional)

– 1 teaspoon sesame oil

– Salt and pepper to taste

– Green onions, chopped (for garnish)

 

Instructions:

 

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the minced garlic and diced onion, and stir-fry for about 2 minutes until fragrant and slightly softened.

 

  1. Push the garlic and onion to one side of the skillet and pour the beaten eggs onto the other side. Scramble the eggs until they are fully cooked, and then mix them together with the garlic and onion.

 

  1. Increase the heat to medium-high and add the mixed vegetables to the skillet. Stir-fry for about 3-4 minutes until the vegetables are cooked but still slightly crisp.
